Food that I like

These are the foods that I have enjoyed both making and eating. I am no chef. This site will probably grow very slowly initially. Its primary intention is as my own online recipe book. Please comment if you feel the desire.

Cheesecake (8-10p)

Ingredients
marie biscuits 1 packet crushed
butter or margarine 100g melted
cottage cheese (preferably creamed not low-fat) 250g
condensed milk 1 tin
lemon juice 1/3 cup
cream 250ml chilled and whipped
Method
1. Mix the biscuit crumbs with the butter and press into a greased tart plate (23cm in diameter) or into a greased spring-form baking tin
2. Combine the cottage cheese, condensed milk and lemon juice
3. Fold in the whipped cream
4. Pour into the prepared biscuit base and bake in a pre-heated oven at 180 degrees C for ten minutes only (do not leave for longer!!)
5. Cool and refrigerate to set
6. Decorate with whipped cream and lemon zest
Optional topping (untested)
Dissolve 2 heaped tsp gelatine in 1/4 cup boiling water
Add gelatine mixture to 1/2 cup melted jam
Allow to cool and spread very gently over the top of the cheesecake

Pancakes

Ingredients
flour 1 cup
egg 1
milk 1 1/4 cups
salt pinch
Method
1. Sift flour and make a well in the centre
2. Beat egg and milk and pour into flour
3. Beat mixture until light and fluffy
4. Pour into non-stick pan and cook until the mixture begins to bubble
5. Remove pan from stove and flip pancake over to cook on the other side
Sweet fillings
Cinnamon sugar and lemon juice; Butter, peanut butter, and sliced banana; Caramel and banana
Savoury fillings
Mince; chicken a la king; mushroom sauce; soft scrambled egg; bacon and tomato
